I start with my favourite Makki di Roti & Sarson da Saag.... Makki dee Roti Ingredients: 2 cups maize flour 1 fistful plain flour 1 tbsp. oil salt to taste water to knead Method: Mix maize flour, oil and salt. Knead in a soft pliable dough, adding very little water at a time. When the dough is very smooth and soft, bread a lump. Shape into a ball, flatten and pat with palm, to make a thin roti. Use dry plainflour to help. Or roll with a rollint pin. Take care to dust with flour and lift and turn to avoid sticking. Place on a heavy iron or earthen griddle and roast till crisp. Repeat on both sides. Repeat for all rotis. Cover and line with napkins to keep warm. Drizzle with ghee or butter if desired. Serve hot with sarson ka saag and slice of onion and lime. Making time: 25 minutes Makes: 5-6 rotis Sarson da Saag Ingredients: 1 bunch sarson greens 1 bunch spinach 1 onion grated 1/2 tsp. each ginger & garlic grated 3 green chillies 1 tbsp. grated cheese or paneer (optional) 1/2 lemon juice......?? salt to taste 2 tbsp. ghee 1 tbsp. oil 1/2 tsp. garam masala 1 tbsp. maize flour Method: Chop both greens, wash, drain. Heat oil in the pressure cooker direct. Add both greens, green chillies, stir. Add ginger, garlic, stir. Add few pinches salt, 1 cup water. Pressure cook till done. (2 whistles). Mash well. Heat ghee in a pan, add onion, saute till brown, Add all other ingredients, except cheese. Stir well and cook till oil separates. Garnish with cheese. Serve hot with makki ki roti, or paratha. Making time: 25 minutes (excluding pressure cooking time) Makes: 3-4 servings | |

Rep Power: 113 | Lassi Patiala Ingredients: 2 cups fresh curds chilled 1 tbsp. sugar 1/2 tsp. cardamom 8-10 strands saffron 2 drops vanilla essence 1/2 cup crushed ice 1 tsp. hot milk Method: Soak saffron in 1 tsp. and rub till dissolved. Mix sugar in curds till well dissolved. Just before serving combine all ingredients. Whip well with a hand or electric beater. The lassi is ready when it is light and frothy. Serve well chilled. Making time: 10 minutes Makes:1 large glass | |

Blend untill creamy . Combine flour,salt and baking soda in seperate bowl. Add to creamed mixture gradually . Stir in chocolate chips and nuts. Drop rounded tablespoons of dough 3 inches apart on ungreased baking sheet.Bake at 375 deg. F. for 8-10 minutes, for chewy cookies 11-13 minutes,for crisp cookies cool on baking sheet for 2 minutes hmmmmm yum yum ![]() [Only Registered Users Can See Links. Rep Power: 113 | Gaajar da Achaar Ingredients: 3 medium carrots peeled 1 medium caulifower stalks removed 1/2 cup salt 1/4 cup red chilli powder 1 tbsp. turmeric 1 cup vinegar 1 cup jaggery grated Method: Cut carrots lengthwise into four, or six, if very thick. Cut lengths into 1 1/2 inch stubs. Keep aside. Separate cauliflower florets. Break to halves if very big. They should match size of carrot pieces. Add chilli, salt, turmeric. Toss well. Transfer to a clean dry bowl, Keep in sun for 4 days. Heat vinegar till warm. Add jaggery, stir. Heat further till vinegar is very hot, and jaggery has melted. Cool to room temperature. Add to sunned vegetables. Transfer to a clean dry pickle jar, close lid tightly. Marinate in a warm dark place for 5-6 days. Turn well with a spoon; Serve with chappatis, rices or just about anything. Making time: 1 hour (marinating 4 + 5 days) Makes: 1 kg. pickle (approx.) | Re: ^^@ Rasoi @^^ Chocolate snack cake - NO EGGS. 1 1/2 c. flour 1 c. brown sugar, packed 1/4 c. cocoa 1 teaspoon baking soda 1/2 tsp. salt 1 c. water 1/3 c. vegetable oil 1 tsp. vinegar 1/2 tsp. vanilla Preheat oven to 350 degrees. Mix flour, brown sugar, cocoa, baking soda and salt in bowl with fork. Stir in water, oil, vinegar and vanilla completely. Pour into ungreased square pan 8 x 8 x 2 inches. Bake until wooden pick inserted in center comes out clean, 35 to 40 minutes. Dust with powdered sugar. Note: Cake can be mixed in pan. | |||||||||||||||

Rep Power: 113 | Chatpate Chane Ingredients: Chana black - 1 cup Ginger - 1/2 " Cumin - 1 tbs Kala Namak - 1 tsp Pudina - 1/4 cup Coriander Chopped - 1/2 cup Amchoor - 1tbsp Chaat Masala - 1 tbsp Green Chilies - 2 Chili Powder - 1/2 tsp Oil - 1tbsp Turmeric Powder - 1/2 tsp Mustard Seeds - 1/2 tbsp Method: Soak chana over night and next day boil it with little salt in it.See to it that they are quite soft to eat. grind to gether, corainder leaves, cumin seeds, pudina, ginger, greenchilies, kala namak. In pan heat oil and temper it with mustard seeds , hing and haldi. to that add ground paste and fry for min or so. then add the remaining seasoning to it and boiled chana. add salt to taste fry for couple of min. DO NOT ADD WATER. and garnish it with freshly grated coconut , chopped coriander, onion rings and lemon wedges. For Guys Only: Just sprout these chanas after a soak overnight...add little salt.
